- Dove Breasts
Serrano or jalapeno peppers
Monterey jack or cream cheese
- Once the dove has been breasted and cleaned thoroughly, place a rectangular slice of your choice of jack or cream cheese behind the breast.
Place directly on top of the cheese a slice of your favorite pepper.
Wrap the entire breast with bacon so the cheese will not ooze out during cooking.
Secure the bacon with toothpicks.
Place on the grill of your barbecue pit (away from direct heat).
Hopefully you have access to mesquite wood.
Once they're done, enjoy!! Experiment with different combinations of cheese and peppers. P.S. I prefer cream cheese and serrano peppers .....the hotter the better!
