- 2 1/2 parts sage
1 part chili powder
2 parts cayenne pepper
1 part black pepper
1 part garlic powder
1 inch venison chunks, partially frozen
- Mix enough sausage seasoning to generously coat the partially frozen venison chunks
Run the seasoned venison chunks through 3/8
After grinding the entire lot, thoroughly mix the sausage with a potato masher.
Store in plastic freezer bags.
