I agree with T-Bird, that is a red stag and not an elk, note the "crowning" near the ends. It would be an 8x8 stag.

When cooking our pronghorn's we use the same recipes as deer and elk, but find the meat to be more tender and has an amazing flavor!

If you have the backstraps whole, slice them 1.5-2" thick...

Actually, "Mormonville" is in Northern Utah county. 78% LDS! I live near American Fork, inbetween Salt Lake City and Provo. It would be around a 3-4 hour drive, but hey, we are talking food!;):D

My dads is on the left and is 15 1/4" and 15 1/2" tall and also is 16 1/2" wide! Mine on the right are even 15"s and is 11 1/2" wide!
