For just starting out the Lee setup is the way to go. Since you are just loading for your rifles a set of dies that has a neck sizer and you have all you need to get you going.

As long as I have access to clean water I rinse it out, as it usually comes out of my deep well it is also cold and I think this helps cool it down quicker. Not sure I buy into the thought of rinsing...

For every 10 pounds of deer I put in 1 1/2 lbs of hard smoked whole bacon plus a deer jerky seasoning mix. I only use deer for chili and pasta dishes. I usually double course grind it.

The 17 is a hands down winner for fox/coyote size game out past 100m compared to the 22mag. The CCI Speer "TNT" and Hornady XTP are just devastating on them in the 150m and closer range.
