I just use backwoods seasonings and follow the directions but I do only use half of the cure it says too,, because me and the kids like it dry -crunchy-hard vs. kindarubbery

I dehydratemine and use store bought marinades and seasonings ,,but you can smoke it ,,its just the dehydrater seems easier to me,,

in fact the jerky I put on at 11:00am today is almost done...

you need to get a term-a-cell (sp) they work great,, best thing I have ever seen,,,I use it bow hunting and it keeps the bitting bugs away,,they won't even fly around your head,

If you don't mine how much did you have to pay to get your birds done,,,I checked where I live for one duck,, they were charging 275.00 woooow that seemed high..I have a great looking canvus back...
