I want to learn to make my own sausage and would like some tips on how to and what not to do.
How do you come up with your recipes. I would rather not get the dump mix but how do you come up with the spices to put into it with out really messing up? I like it warm but not real hot.
Equipment, caceings, ect. hints would be great.

I have made all kinds of sausage. Now a days I just grind it up for breakfast sausage. The local store has the seasoning mix. I just finished tonight making a bunch of it. I got an electric grinder at Cabelas. I buy rough ground pork or cheap pork roast and grind the deer and the pork one time through with the corse plate. I then dump in the mix, It will tell you how many lbs of meat the packet will treat. I mix it together well and then run it through the grinder again with the fine plate in the grinder. I then mix it again and I have a patty maker that I got at Cabelas with the little papers to put between the patties. The store has the casings as well and the grinder comes with a sausage stuffing tube. I also made some burger patties grinding beef in with deer. My wife is just finishing canning six quarts of meat as well. We can quite a bit. we add a little beef tallow and or beef bouillon cubes. When we need a meal quick we just open a jar of that and thicken the juice and put in on biscuits. We lived on that stuff the first few years we were married.

" The Sausage Maker" has a book out that is the bible of sausage making and I would suggest you get it. Its sometimes available through Cabela' s or Bass Pro Shops, but you can get it directly from them at this Website http://www.sausagemaker.com/. They also have a book for making venison and game sausage and prepackage kits. You can also try Eldon' s Sausage at www.eldonsausage.com for another source of game sausage books and kits.

no ; not at all Who. I make all my own sasuage. I just made and smoked 115lbs. two weeks ago.
it' s just that the book we are speakin of is a great book to have on your shelf.I will bring mine with me in a day or two if you need anything special.

Ok, so you are telling me the book has these answers on the basic things you should or should not do.
I understand this but What I am trying to ask is if any of you brached out and created your own recipes and if so how did you come up with it? did you just add spices at will till you had somthing that you felt was good or was it handed down over the years or what?
Just trying to get a Idea where others come up with their recipes.
I will see about getting the book. I have my grandfathers old meat grinder also. Will this help or better to get a modern model?

I have been making my own for over 20 years. To develope a new recipe I start with a basic recipe as per the books for the type of sausage I want to make then I add or subtract spices to my taste. I hate cloves and Allspice if a recipe calls for it I never put it in. It' s a hit and miss for the first few times. Keep good records as to what spices you added . After a while you will know what you like and how much spice to add.

Who- get the book and it explains what can go wrong, what to do and not do, There are to many variables to type up here on the forum. Good Luck
