I have made all kinds of sausage. Now a days I just grind it up for breakfast sausage. The local store has the seasoning mix. I just finished tonight making a bunch of it. I got an electric grinder at Cabelas. I buy rough ground pork or cheap pork roast and grind the deer and the pork one time through with the corse plate. I then dump in the mix, It will tell you how many lbs of meat the packet will treat. I mix it together well and then run it through the grinder again with the fine plate in the grinder. I then mix it again and I have a patty maker that I got at Cabelas with the little papers to put between the patties. The store has the casings as well and the grinder comes with a sausage stuffing tube. I also made some burger patties grinding beef in with deer. My wife is just finishing canning six quarts of meat as well. We can quite a bit. we add a little beef tallow and or beef bouillon cubes. When we need a meal quick we just open a jar of that and thicken the juice and put in on biscuits. We lived on that stuff the first few years we were married.
