RE: Sausage
I have been making my own for over 20 years. To develope a new recipe I start with a basic recipe as per the books for the type of sausage I want to make then I add or subtract spices to my taste. I hate cloves and Allspice if a recipe calls for it I never put it in. It' s a hit and miss for the first few times. Keep good records as to what spices you added . After a while you will know what you like and how much spice to add.
