Buckwheat, winter wheat or oats allowed to mature, switch grass for cover, corn, there are alot of possibilities, but variety is most important.

Depending on how large of a plot you are planting, some sorgum (aka milo) would work well too for both critters (clover, rye and winter wheat would work as well). We had tremendous success this year at our place in northcentral wisconsinwith canola (aka rape) for the deer...they ate that like candy. There's a ton of corn and bean fields around our area, so putting something different seemed to help (especially when our stuff was still green in november). Deer are self regulating as far as their diet is concerned, so they like the variety. One of the best things you can do to attact and keep them on your property is to put in a watering hole or two if there aren't plentiful water sources nearby...it doesn't have to be huge (maybe a 5' diameter and a foot or two deep). And depending on the soil, it might not be a bad idea to put down something to keep the water from seeping away (like a rubber roof membrane or even an old pool liner or something). Just my two cents.
