Once the gutted deer is in the pickup I back in to the garage and loop a rope around the neck of the deer and over the roof truss . I then secure the rope to the truss and drive forward, leaving the deer hanging. The garage door is closed and i'm ready to skin and debone, after proper aging. WARNING: tell the wife what you're doing before she spots the hanging carcass!

Yup, hanging makes skinning and rendering a carcass into smaller parts easier than trying the operation on the ground. Do it that way if you can.
As far as field dressing, here's my general method:

Just to make sure I understand the question, you are talking about field dressing (gutting) the deer on the ground aren't you? This is not very difficult to do and I'm sure most people field dress their deer on the ground.
If you are talking about processing your deer then that is another story. I'm sure it can be done but by someone with much more experience than I.
