Cookin your waterfowl
How do you guys get your ducks and goose to taste real tasty? The way my parents cook them isn't all that great...all they do is roast it or whatever with sour krout on it, the krout is good but the waterfowl is....yeah, so if i could get some suggestions i'd really appreciate that

breast them and cut the breast thin, make up a shake-n-bake flour base, use all/any spices in your rack. you'll know it right by smell. dip and pan fry. its great for cooking in the field also.

Like Nas said start with thin strips in a baking pan you can either use the store bought kind of bar- b-q sauce or make your own(I'd give you mine but it changes every time) I start with ketchup, mustard,honey,brown sugar,sometimes if I have it a little lemon juice if not lemon herb seasoning and salt and pepper and anyother spices that you have or like.Make sure breast are covered with sauce pop in oven at 250 or so and cook slowly for about 1 to 2 hrs. I like to check them and turn them over if sauce get below the breasts. For sidedish rice aroine wild rice works very well. Hope you like it cause i usally over eat when I make this.

This is what you do. Get you a slice of bacon. Lay it out, put a slice of duck breast on the end of the bacon strip followed by a sliced jalopeno pepper, then a dab of cream cheese, then another slice of duck breast. Then roll the bacon up around all this and secure it with a toothpick, grill till crispy. I garauntee you will never fix it a diff. way. Any questions just ask.

I have taken to making stew out of ducks this year. Up until now, I either soaked 'em in gingerale and orange juice overnight and roasted them or right on to the bbq. For bbq ing all you need to do is marinate in salad dressing (italian/roasted tomato, etc.)for 15 minutes - 1/2 hour, then throw 'em on the grill. You can use red wine for marinating if you like, too. My mouth is watering. You can't beat the taste of a bbq'd goose breast...

Here's one that goes back a long way with my huntin' gang- Fillet the breast meat off the goose-now you have two slabs of meat,put-em in a crockpot with a sliced onion,1/2 pound GOOD slab bacon, barbeque sauce to cover, and a capful of liquid smoke. After ten hours or so, start stirring it to break up the meat. It's ready in about another 10 hrs. My buddy's son gets three hamburger buns when its ready and makes b.b.q. sandwhichs. We just pile it on a plate over egg noodles and a veg. ENJOY!!<img src=icon_smile_big.gif border=0 align=middle>

I bought an inverter to roast the ducks and geese in the oven. All the greese just flows off into the pan under the bird. Lots of terrie/ginger garlic sause to baste.1.5 to 2 hrs low heat.after breast out cut verry thin. I got a meat slicer for that, place back into pan and cover with baste and return to oven for a few just to heat. Try wraping the meat in rice pancakes with plum sause and shredded salions. Tasty. I'm going to print this page and try all your resps this weekend. Thanks Guys.
