I have taken to making stew out of ducks this year. Up until now, I either soaked 'em in gingerale and orange juice overnight and roasted them or right on to the bbq. For bbq ing all you need to do is marinate in salad dressing (italian/roasted tomato, etc.)for 15 minutes - 1/2 hour, then throw 'em on the grill. You can use red wine for marinating if you like, too. My mouth is watering. You can't beat the taste of a bbq'd goose breast...
