I think the weather during your season will matter much more. For instance if you have a day or two of rain and then a sunny day with no wind, the birds will be going crazy, in my experience.

I always hang deer 3-5 days, weather permitting. However, we always cut out the tenderloins once they are hung, and grill them up the same night they are killed. They taste amazing.
