I break the wings off, pull some of the feathers off of the breast, and put my thumb under the breast bone and lift twords the head pulling the breast free of the carcass. Soak in salt water or buttermilk wrap in bacon and grill.

I don't know how exactly to explain it, but I'll give it a shot.

Pluck the breast feathers clean. Clip the wings off with scissors or a knife. Then take your thumb and find the bottom of the breast. Poke your thumb through the skin up under the breast, and then pull the rest of the bird away from the breast, like your going to pull the bird in half lengthwise from the bottom to the top. You can see the breast when you start seperating, and just pull it free from the rest of the bird, removing all the skin and washing to remove feathers.

Sorry I can't do any better, but it is just something that I have a lot easier time demonstrating than explaining.

My 2 cents.
Clip the wings w/ sciorrs first. Do all of the birds at one time.
Holding the bird breast up tail towards your belt buckle place both of your thumbs at base of breast.
Spread your thumbs apart skinning the breast feathers and all.
Pull the breast away from the carcass and drop it in a bowl of water.
When all the birds are cleaned and in the bowl put it under running water.
The feathers that remain will rise to the top of the bowl, Skim them away.
Using the scissors clean any remaing part of the wing joint.
Soak in salt water over night.
Grill wrapped in bacon or
Fry in peanut oil {batter em} or
Freeze in water for later use.
