squirrel is my absolute favorite game meat, better than marinated wild turkey breast, or any form of venison.

Makes 4 servings
1/4 cup honey
1/4 cup lemon juice
2 teaspoons vegetable oil
1 teaspoon rosemary, crushed
1 teaspoon grated lemon peel
1/2 teaspoon salt
1/8 teaspoon pepper
4 (3-1/2 to 4 oz. each) ground squirrel patties
Combine all ingredients (except squirrel) and mix well. Marinate squirrel in honey-lemon mixture 1 hour in shallow baking dish. Broil squirrel 5 minutes, brush with pan drippings, turn and broil 5 minutes longer. If desired, bring marinade to a boil; simmer 2 minutes. Strain hot marinade over squirrel.
