Default Eating squirrel

I've never squirrel hunted. I have a stupid question: Do you actually eat the squirrels? I know some people that let them lay.

Thanks for any insight.

squirrel is my absolute favorite game meat, better than marinated wild turkey breast, or any form of venison.

Talking

Makes 4 servings
1/4 cup honey
1/4 cup lemon juice
2 teaspoons vegetable oil
1 teaspoon rosemary, crushed
1 teaspoon grated lemon peel
1/2 teaspoon salt
1/8 teaspoon pepper
4 (3-1/2 to 4 oz. each) ground squirrel patties
Combine all ingredients (except squirrel) and mix well. Marinate squirrel in honey-lemon mixture 1 hour in shallow baking dish. Broil squirrel 5 minutes, brush with pan drippings, turn and broil 5 minutes longer. If desired, bring marinade to a boil; simmer 2 minutes. Strain hot marinade over squirrel.
