Dont feel bad, thats all I do, except Ill pull out the loin as well. Everynow and then ill keep the ribs. Not real often though. Wild hogs dont have much more worth keeping . I wouldnt even try to keep the bakon or hocks.

I know I am a bit crude, but I usually just cut out the shoulders and hams and the back-strap, and leave the rest for the buzzards.. ... There isn't anything else in a small hog for me to eat anyway.. And if your going to skin one, it's not big deal, just have a sharp knife and don't get in a big hurry.

REV, do you 'guesstimate' the meat cuts, and cut the skin off later?

Normally that's what I do, but I try to take off as much of the skin as possible because I like to put the meatin a cooler with ice, and the skin is very dirty and gets in the meat. When I get home, I go through each piece making sure I have all the hair off. Each day I change the ice and water again checking there is no hair and cutting off the clear fat off the meat. I put several potatoes cut into quarters in the water.. I repeat the process for a min of 5 days or until the smell is completely gone.

I usually skin it to the part im cutting out. Hogs hair is full of all kinds of boogers. Very muddy and nasty. If possible, I hose them down good before cutting meat off them.
