I guess the only thing I can add to this thread is.......
the data you gave was pushing a 162 gr bullet at 3200 fps. A 300 Rum can push a 162 gr bulletfaster than 3200 with a fairly reasonable load. Probably 3300 would be the fps in theminimum of theload range 3450 would probably be the max. A 7mm weatherby to push a 162 gr bullet to 3200 fpswould probablybe either at max or possibly compressed. So I guess what Im trying to say is, you are burning out the 7's barrel to get those results and undershooting the 300 rum to get those results.
You are going by a manual, and alot of times the numbers as far as velocity etc are hard to achieve. I would have tosit down with a 7 weatherby and my 300 rum and compare such ballistics first hand before I would say it blows the 300 ultra away.
Im just trying to give you MY THEORY on what you have posted. I dont know exactly because I dont shoot Hornady bullets nor do I own a 7 STW or Weatherby. Im just trying to give you my opinion.

Your data is a little biased toward the 7mmWBY.
Even with a 26" barrel you would need avery hot load to reach3200fps with a 7mmwby.My two 7mmstws only produce 3300fps with a 160gr bullet and a 26" barrel.
On the other hand,my 300ultramag produces 3380fps with a 180gr bullet and a 26" barrel.With the 168gr bullet 3500fps is easily done.The 30-378 will produce 3500fps with a 180gr bullet.If you use equally hot loads for all of the cartridges,the7mmwby no longer has any advantage.In fact it will fall behind.

All ballistics and loads were max loads from the hornady book. I made sure I did not favor either gun. Hell I own a 30-378 and am now second guessing that purchase. The 7mm is outshining NOT AT THE MUZZLE rather it is outshining from 600-1000 yards. That is what suprizes me. I think it is because of the BC of that 162 gr bullet.

What kind of case life do you get out of that load?
Have you shot that load and if so how was it targeting at 1000 yards?
How often do you trim those cases?
Will the bullet hold up to close range impact?

I do not belive that bullet is designed for hunting. It may deliver downrange energy better, but the terminal performance will probably be dissapointing. Many of the Match Grade bullet in all calibers will phenominal BC and that is not unique to 7mm bullets.

Just doing some checking. If you want to compare the 30 caliber to the 7MM using the 160 grain bullet in the 7mm, then you would need to use a bullet such as the BTSP in the 190 grain to compare bullets of equal SD. The 300 RUM will fire this bullet at 3200 fps (Hornady Manual) Now you can compare the down range ballistics.
