Default Change in temperature

I am used to starting icefishing at this time of year. But since I am in Alabama now, that is out. I need to find out from anyone who has fished in the southeast what effect water temperatures have on fish and how active and hungry they are during the late fall through the winter. I would not think that temperature of saltwater would change that much but some of the streams and coastal wetlands and ponds would change significantly. I am getting antsy to fish, so I appreciate any feedback.
