Wild pig sausage, any recipes?

Default Wild pig sausage, any recipes?

I have a tiny wild pig in the freezer, I mean a little guy. He looked much bigger because he was with 5 or 6 his same size and they were far away!! Completely stumped me. Anyway I'm planing to mix about 60% of it to 40% of the cheapest, most generic store sausage I can find and try to make some sort of sausage. What should I do?

get yourslef a couple of boston butts from your meat market(enough for 25lbs ) total meat deboned.your and the butts.

one package of A.C.Leggs Old Plantations sausage seasons.
mix all together grind and you got some good eating.

you can eat it as fresh sasuage or stuff and smoke it.[8D][8D]

Any recipe for domestic pork will taste the same with wild pig .

kevin;I would have to agree to disagree with you there.
all the wild hog I have ever eaten,(and that is in the 100's) has a complete different taste to me.
Tame hog is just plain bland pork taste.wild has a bit better pork gammie taste. (that is to my taste buds).

I stuffed and smoked 74lbs.of wild hog sasuage tuesday.every one that eats my sasuage says that it is the best sasuage they have ever eaten.I am not bragging on myslef and my sasuage,just what everyone says.

I think the difference in taste has to do with all the acorns,grubbs,worms and roots they eat.just a different taste to me.
