I gut all my deer gut shot or not. It makes it easier dragging, and a little bottle of water can wash my hands. If you are leaving tenderloins you are leaving some good meat, even with most gut shots the tenderloin will not be spoiled. I eat the heart too, "Heart and Eggs" nothing like it. As forthe liver I usually give to someone who likes it, as i do not have a taste for it. My Dad, Lknhuntress and I kill a lot of deer each year, and we take the time to gut, clean and process each deer, we don't take shortcuts. The deer we give away to people that need it is processed and packaged by us as well. I don't condone leaving tenderloins unless they are spoiled and that is rare.
