You sure are worked up about that photo. :D It was difficult to get the right angle on the shot, and I had to work with the lighting some, but I think I captured the moment perfectly. [&:]

ABM--really surprised you guys didn' t gloat about the backstraps! That' s SEAK normal MO! Of course, I try to do the same to him...when he' s had some dried out mexican casserole, I' ll casually (okay, not so casually [>:]) mention that I had vension or something.

Phish--I' ll give you a call...I have SEAK' s niece staying with me for a few days starting tomorrow, so it' ll probably be sometime next week.

junogrl, I' ll be checking the mail tonight for that care package. I plan to re-work the coolers this weekend to figure out how much meat we can get down to Juneau on the 17th. I' ve got 120 pounds or so hanging out up here, so got plenty to divy up.

Nimrod, are you back up north now? Looks like we' ll be headed over your way sometime early next week.

ABM--REALLY REALLY looking forward to the caribou! I ordered a sausage stuffer attachment for my KitchenAid--helloooo hot links! (I' ll make sure we freeze some and save it for the bear hunt!)

SEAK and I worked up 70 pounds into that box, so it' ll be coming down soon. You guys will have to divy up the meat down there, but the main package was going down to Phish. Good thing I got the extra bou as some of you are sounding greedy. ;):D

Lots of roasts, steaks and burger meat to go around though, and hopefully by spring we' ll catch another caribou and restock the freezers.

I' ve used out kitchenaide to make summer sausage before that came out great. The casings were about 2" wide, so you have to stuff them pretty tight, then when they get smoked, they come out just like it was from a 2" casing stuffer. The sausage stuffers that kitchenaide make for their meat grinder is only like 3/4" and 1" thick, but works all the same. Make sure when you are stuffing the burger through that you don' t have the blades on, otherwise the meat will take forever to go through, and get clogged up quickly.

I wish I had my kitchenaide now, but it' s somewhere packed into storage in Fairbanks. :(

We are going to have to talk about the sausage making while I am down. I' ve been looking for the meat grinder and sausage stuffer attachments for my kitchen aid, and it appears I am going to have to order it.

I' m interested in your experiences with it though.
