Oh man dude..
I thought this would be over........
Let me get this straight...You told him how you felt about your mount and he's blaming the quality of the mount on a tick problem.......
So as far as he's concerned the deal still on.......
You gave him a bunch of hides as "an intended payment" (to make things even)and he figures the deals still on......
He wants a huge deer......
So far you've taken the right steps and have been the nice guy and so far he hasn't clued in to what you want...

Tell him nicely face to face your not happy with the mount, your friends think it god-awful and so does everymember who viewed this thread on HNI....
Tell him your taking it to another taxidermist who is going to fix it,
and tell him you can keep these hides as payment inlew of the hunt..
If he can't live with these terms, tell him to take you to small claims -court, and the judge can decide on the matter...
The court willmore than likely rule on your side, even if it was a arrangement cause nobody likespoor workmanship.....
This way you at leasthavea coutersuit claim against him for the return of the hides and a bill for fixing of the mount....

It hit or miss the deer all move from piece to peice and you need to focus on the food sources and its all scrub oak. There are big deer but you need to find an area that no one looks in and you might get a chance at a big buck.... Just curtiouse how much to remount
