Default training question

I have been doing a lot of work w/ my pointer this summer. its been slow but am seeing progress.
all the bird work ive been doing has been on the check cord, cause he's not too good w/ holding.
so the last few weeks ive been working on him w/ quail in the woods instead of fields. so a few times when we would start to get close, the bird would run on us. now i know if i want them to hold better dizzy them up more, but i want to know how should i work him in this case cause im sure it will happen w/ wild birds. now what he's been doing is he catches fresh scent and starts searching around and ill spot the bird out in front running away, so i just lead him off on another bird that i have out. what should i do in this case??

PA take the birds and possibly dizzy little more, put them down in something of shelter....down fall with some limbs that overhang, cedar down fall, stuff like that. pen raised birds get real spooky in timber, so give them a place of shelter, puts them in comfort zone....also, wear a hat...because when one is running away, you can throw the hat at him, and get it up, you just about got to hit him. dont let him fart around long, make the pressure worse on the dog. I find what Jonesy said in dizzying them and also have someone
help you . I like to use a check cord and have a helper hold it while
I circle around so the bird is between me and the dog. When I walk
towards the dog the bird tries to run at the dog. In seeing this the
bird will fly up, and the dog is still being held until released.
