Rabbits are pretty easy. Thier skin peels off rather easy. Squirrels on the other hand are a pain in the butt! What I do is after gutting them I snip off the two back feet. Then I slit the skin from the knee to where the foot used to be. Peel the skin off around both legs and keep pulling upward. Like pulling a shirt off over your head. After that I snip off the front paws and head then cut off the legs where the joints meet the body and cut out the good meat from the back and toss the rest. The rabbit is pretty much the same just much more easy to do....Good Luck ...Jim
