Skinning squirrels
Does anybody else skin them by cutting behing the tail?
Here's what I do. Lots of folks around here do it, but all I read on here is skinning them across the back, and that's a hairy mess waiting to happen.
1. Make a cut between the base of the tail and the anus. Cut until you are through the tail bone. Skin about 3/4" down towards the squirrels back. (After doing a few, this takes about 5 seconds)
2. Get a brick. Lay the squirrels tail on the brick with its belly facing upwards.
3. Pull on the back legs HARD and swift until the squirrel is undressed.
4. Grab the little bit of skin on the squirrels belly and pull until the back legs are skinned.
5. Cut, de-head and de-feet. All done. Not a single hair on the animal.
If you do it right, you don't have to touch the meat until the skin is completely removed.
I can have one skinned and soaking in a pan in around 1 minute. Not bragging...I have just done a ton. When I was in college, we lived on them. Some days we had 30-40 to skin...you learn to do them fast. It's been 10 years since I've skinned a big batch, but I do 10-15 each year.
BTW...A big old fox squirrel slows the process compared to a grey squirrel.

I usually clean them by cutting in the middle of the back.first I put them in a bucket of water,pull them out,cut off the head tail and all 4 feet. then cut the back and stick a finger of each hand in the cut and pull.the skin pulls off like a shirt. never touching the meat.the water keeps the hair stuck to the skin.
I guess it all depends on how you were taught when we were kids.[8D]

Ifferd...I don't use water with mine. If they're not shot up, there is no hair left to touch the meat, so I don't use water.
I do water down my rabbits, though.
