I used ot eat them up north..I love farm raised catfish in restaurants..I'll grade our 3 species here in Florida

Chanel catfish...fair
Bullheads fair - poor
Blue Catfish poor

Therefore..I thrown them all back

However
Crappie Excelent
Shellcrackers Excellent
Bluegills Excellent
Bass Poor
Striped Bass Excellent
Tilapia Good
Those of course was my opinoin only.

Catfish can taste really good but it depends when you happen to catch them. i fish for cats regularly but only keep cats to eat in early sping and late fall and only eat catfish less than 5 lbs.

I figured that out as well. Cold fish are better. In Maryland I could eat all the fish ...bass, suckers , catfish..they were all good. Down here is HOT , sunny Florida { To me} the fish taste???kind of grassy , I fixed a batch of crapie last night They were 5 star.

Also, nearly all of our fish are wormy. I have to hold the fillets to a light and cut out the little yellow rolled up worms that are about as big as a # 5 shot. There are usually about 2 -3 per fillet.

About the best eaten freshwater fish out there!

I always soak them in salt water overnight.

Catfish are great eating. I like them best breaded though.

Depends on how they're cooked. A friend of mine and I use to have a fish-fry every July. We would catch most of the fish ourselves during the year, (he'd buy walleye and lake-trout fillets in Canada when he'd go up). He use to smoke all the catfish and I just never liked it. Then one year he decided to fry them in butter and garlic and lemon, and I ate 5 fillets in one sitting! Some of the best tasting fish out there!
