I have to agree. Fried catfish is hard to beat. But stick to the smaller ones (<5lbs or so). If you live in mud long enough sooner or later you'll taste like mud.

favorite recipe: fillet the catfish and cut into strips, then soak in milk for a couple hours and then batter and fry .

Excellent eating. We have all species in SC and we eat them all. Large ones are good also but all the red meat on the sides and the silver lining on the blues' and channels' belly cavity must be cut out or it will be STRONG. Just make the big pieces into little ones, about the size of your thumb, hence catfish fingers. Early spring cooler water cats are better than later when they have more fat in them. Catch em and eat em!

Cats are good eat'n, Just like others say, the smaller ones taste better than the really large ones. I like mine with some cajun kick to it.Our kids catch'em we all eat'em.

Been eatin' catfish all my life. Delicious. The other guys are right though, the smaller ones are best tasting. But that's true of most critters.
