As long as we're talking beets.....
here is a recipe for a cold soup that we call "Holladneek", not really sure about the spelling , but thats the way its pronounced:
4 med. beets (2" dia.), use stems up to leaves also
1 large cucumber
1 bunch green onions, use stems also
1-1/2 gallons buttermilk
cook the beets,peel, then dice into 1/4" cubes
Dice the stems
dice the cucumber
dice the green onions
after the beets have cooled, mix all the vegatables into a large stainless steel bowl and add the 1-1/2 gallons of buttermilk, chill, then serve cold.
Salt liberally to taste, eat with a good slice of rye bread !!!
My kids and I love this on a hot summer day. We don't know if its a Polish or a Russian dish, because it came over with my dads parents form Poland !!!
The buttermilk WILL turn pink from the beets....my kids always said it was "done" then, LOL !!
