Joe...I can my own peppers. Here's it in a nutshell:
I wash and dry several quart jars. Pack each quart jar with peppers, and put 1 clove of garlic in each jar. Then I mix 2 parts vinegar to one part water. Add to a pot and bring to a boil. After the mix has boiled for 5 minutes, I pour it over the peppers. Leave about 1/2" at the top of the jar. Then put on lids and seal with canning bands. Simple and yummy...

Joe, If you are going to slice them in half make sure you wear some rubber gloves.
The first time I canned some I was told to do that. Needless to say I did not do it and paid for the mistake with burning hands.
