Anyone can their own?
I want to start canning some of my vegetables..(mainly jalepenos and sweet peppers) How do I get started?

Joe...I can my own peppers. Here's it in a nutshell:
I wash and dry several quart jars. Pack each quart jar with peppers, and put 1 clove of garlic in each jar. Then I mix 2 parts vinegar to one part water. Add to a pot and bring to a boil. After the mix has boiled for 5 minutes, I pour it over the peppers. Leave about 1/2" at the top of the jar. Then put on lids and seal with canning bands. Simple and yummy... |

I just wait a couple days. They'll last quite a while, though. At least a year...

Joe, If you are going to slice them in half make sure you wear some rubber gloves.
The first time I canned some I was told to do that. Needless to say I did not do it and paid for the mistake with burning hands. Good Luck and let us know how it turns out. Ball puts out a really good canning booklet that has pretty much recipes, and tips for about anything you would want to can. |

Christine is right...Make sure your hands are free of ANY pepper residue before visiting the bathroom. If you don't, it'll be an experience not soon forgotten. LOL
