Joe...I can my own peppers. Here's it in a nutshell:
I wash and dry several quart jars. Pack each quart jar with peppers, and put 1 clove of garlic in each jar. Then I mix 2 parts vinegar to one part water. Add to a pot and bring to a boil. After the mix has boiled for 5 minutes, I pour it over the peppers. Leave about 1/2" at the top of the jar. Then put on lids and seal with canning bands. Simple and yummy...
