After the dove is cleaned
With a shrp knife slice down each side of the breast bone running next to and parrallel with.
Put a small amount of cream cheese and a slice of jalepeno on each side.
Wrap in bacon, secure with toothpick and sprinkle a little of your favorite seasoning on.
Grill on a mesquite fire to perfection.
Enjoy with your friends and a cold Budwieser.

Simple but tasty. Season 1/2 cup flour with 1 tablespoon salt, 1 teaspoon seasoning salt, and 1 teaspoon pepper. Heat skillet with 1/4 inch of oil to medium high. Dip dove breasts in milk, then roll them in flour. cook until done. Mix gravy with remaining drippings.

my wife takes the whole bird and season it,lightly flour,pan fry till light brown,put in pressure cooker till tender,take out and put in iron skillet simer and make gravey from the drippings and crumbs left in the pressure cooker,add a little flour and brown.
those wings and legs aren' t much for meat,but they are great for sucking the gravey off of.the back is even better.try saving the whole bird for once.
most people just pull the breast and trash the rest.they are wasting a lot of good eating.JMHO
