We used to use Hickory and Maple when smoking our salmon. A few slabs of that and a couple of cold beer.......you can`t beat it.

So you use whatever you can find. Good! I have some pine tree's I want to get rid of . FREE, can't beat that price. Let me know when you want to come get them. I will help you load them.

I like apple for pork and mesquite for beef.

I generally use a mixture of Hickory w/ Apple Chips on most Pork Products and Briskets, but I would also think that using Mesquite w/ Pecan Chucks would make for a good smoke.
