Best wood for smokers
I want to hear what kind of wood you guys prefer to use in your smokers.
Last week I used some wood from a plum tree that was damaged in an ice storm to smoke some deer tenderloins. Wow, it was simply awesome. I have also used wood from a persimmon tree and that was pretty good too. |

I like fruitwoods in general, particularly apple, my least favorite is cherry. I did a turkey with cherry once, it tasted exactly like ham. I also occasionally use mesquite and hickory, the classics are hard to improve upon.

Living in South Texas, I use oak, pecan, mesquite and hickory where is is all plentiful. Matter of fact I have some venison in the smokehouse as I type this. Wow, what a glorious 44 degree morning with the pungent smell of mesquite in the air, it doesnt get any better than that.:)
