I like to brown it in the skillet and then put it in a hot spaghetti sauce.

Squirrel Casserole this is a good one-
4 cups squirrel - cooked, boned, cut up
1 pkg. Pepperidge Farms dressing or your favorite dressing
1 can cream of mushroom soup + 1 cup of water
1 can cream of chicken soup
1 stick butter cut up on top
Layer ingredients in casserole dish with butter on top and cook 30 minutes at 350 degrees.

My grandmother battered the pieces in a milk and egg batter and fried them (think fried chicken) and she made squirrell dumplings (just like chicken & dumplings only you use squirrell instead). I have baked a few and they turned out okay (gotta be careful about them drying out in the oven) and put them in foil on the grill in BBQ sauce, very good.

I generally throw them in a crock pot with veggies and season to taste.
I have tried it on the grill, it's pretty tough, so I just stick with making stew out of them.

i got a couple in the freezer right now from this past weekend, and im thinking about frying them a little in a pan with oil, then wrapping in foil with barbecue sauce and baking in the oven. But my question is how long and at what temp. should i bake them? I know i dont want to cook them fast because they can dry out, but the foil should help prevent that.

any suggestions on time and temps? should i bother frying first as someone had mentioned earlier? or just bake them in foil?

There was an article in the Field & Stream from August or September that gave a good way to do them up. Check it out if you can find it.

Crock pot, add onions, minced garlic, diced tomatoes, and any other veggies you like. If you want to add some real flavor, add some kilbasa saugage on top and let that all cook up for at least 6 hrs.
