RE: squirrel?
My grandmother battered the pieces in a milk and egg batter and fried them (think fried chicken) and she made squirrell dumplings (just like chicken & dumplings only you use squirrell instead). I have baked a few and they turned out okay (gotta be careful about them drying out in the oven) and put them in foil on the grill in BBQ sauce, very good.
