I keep seeing you mention a paper bag Tony, what exactly does this do for the jerky? I finally thawed out my freezer, so I am picking up my 5 gallons of jerky meat from my buddies house tomorrow, and your recipe is goin on the first batch.
I don't know the science behind it, but allowing the air to get to it the first day helps with the texture aand taste IMO ....... I have NO idea why, I just found that out by mistake [8D]


Can you just leave it out on a plate or something?

I wouldn't ... it could end up to dry and tough ..... wrap it in a towel if you don't have a paper bag ....

I put mine in a bag for a day then just put it in a glass jar that is sealed pretty well with a rubber gasket.

I hope that's ok!

Yes she did, she likes it! She's not afraid of spicy foods, but we both agree I added too much heat I'm going to make another batch soon.. I dont think its going to last very long

Just put everything together and I am missing worchestershire. Anyone want to run some up to MI? Tomorrow is another day.
