Ed ... put them in a paper bag until tomorrow morning ...trnsfer them to a platic ziploc ...... it will be better tomorrow :)

I keep seeing you mention a paper bag Tony, what exactly does this do for the jerky? I finally thawed out my freezer, so I am picking up my 5 gallons of jerky meat from my buddies house tomorrow, and your recipe is goin on the first batch.:)

I don't know the science behind it, but allowing the air to get to it the first day helps with the texture aand taste IMO ....... I have NO idea why, I just found that out by mistake [8D]
