do you have to hang your deer before your cut it up
i have been told this before is this true if so how long do i hang it for

I don't hang, never have, don't care to eat anything that has been decomposing. Alot of people do hang them for a while, I cut them up same day and get it frozen, most sanitary way to do it IMO.

Some people say you should age it. Others say you shouldnt. Either way it is still good to eat so just do what you have time for. Just make sure that you hang it somewhere that is cold enough and clean enough.

You don't need to age deer however it cuts up better if the meat "sets up"....IMO....If temps allow, I'll skin it as soon as possible, you need to get the body cavity hung, skinned and opened up to cool. The faster you get the organs and blood out the better the meat will be, again, if temps allow I'll hang it overnight to set the meat, butcher it the next day. If temps are high and bugs are out, process immediately. I just find the meat cuts nicer after the day, again if temps allow.

U sed to "age" my deer but this year I couldnt cuz of the warm temps. I found out it tastes just the same. I got it saturday afternoon. Ate some sunday..........very delicious.

i always process mine the same day and get it in the refrigerator. there is a fine line between aging and rotting . aging deer is a myth there is not enough fat to make a difference
