Re-freezing pre-frozen meat?

I do that exact same thing all the time.I'm a single guy so using a whole pkg. of meat is just a waste.I'll either use freezer bags and get most of the air out or set up the vacuum sealer.

Its not good for the meat, but it won't totally ruin it. Ice crystals form in the frozen meat, rupturing cells and releasing moisture. When you refreeze the meat you geta second round of that. You'll lose tenderness and the meat will be dryer when cooked.
