Will deer eat sorghum?

We planted way to early (Pennington Rackmaster S/S Mix) and the deer have eaten the peas and beans to the stalks. The sorghum is chest to head high and most is in seed (some is still flowering). Will the deer eat the sorghum or not? Or will we see more birds in the plots than deer til fall planting...
Also, if I hand spread some peas and beans around the sorghum and work it into the soil slightly, what's the likelihood it will come up in three weeks (when bow season opens) without getting destroyed by the deer?
Thoughts? Ideas?
