It is a big deal down here. When you have 30-twenty acre parcels just across the fence and every one of them has 2 corn feeders and blinds, how many deer/bucks do you think they are going to kill?

It is a lot more than a "few", I can guarantee you that. I realize you are probably unfamiliar with how things work in Texas, but the above scenario is REAL and occurs all the time in Texas.

I suppose it all depends on who owns the deer. If the deer within a high fence operation has been brought in or raised like cattle on a farm, from same farm and bred there, then I can understand the need or desire to fence in the land, but not if the public's wildlife is fenced in so as not being able to escape.
