Here in South Georgia everyone I know around here hangs them by the back legs and once we hang them up, we clean them right away. If we didn't I think the yellow jackets would take care of them for us.
I have been to West Virginia the last two Thanksgivings and killed deer. I loved it being cold enough to let the deer hang and not have to rush and clean them. Just field dress them, and hang them.

Head up to hang, head and skin on until butchering time. Sometimes head down to skin and butcher.
Does anyone do the "tie the skin to a 4 wheeler and drive" trick? How does it work?
