I smoked turkey breasts, didn't really do anything fanncy, just smoked em over medium low heat for a couple hours with a mix of mesquite and hickory chips. Turned out great.

I have smoked turkey breast before also. I like hickory or apple for smoking wood. THe apple gives the meat a sweet flavor. I like to have a pan of water between my meat and the fire so it help rehydrate the meat. Soak your wood chips in water before using them and your ready to go.

Inject with Chachere's Creole Butter or with melted unsalted butter , smoke over apple until it's slightly underdone and finish cooking in a slow oven to avoid drying out the meat . Watch the internal temp carefully .

I have never injected any of mine. Never really found a taste I liked. Depending on if your turkey is frozen or thawed will decide how long it takes. If my turkey is thawed I smoke it under heavy smoke for a good 2 hours. Keep an eye on the amount of smoke coming out of your grill.

Sounds tasty to me. I don't know how well the smoke will get thru the bacon but you will only know if you try it.
