I've made my own strings for at least 15 yr.'s. The process is incredibly easy. I recommend a 3-strand construction. It's "rounder" than a two-strand and the serving seems to stay in place better. It's great to have three different colors woven together.

Sorry I missed this one--been gone since Thursday.
Making a string isn't hard, but it can be hard to get good instructions, plus it can be hard to follow with just pictures and writing.
Personally, I don't see any benefits to a 3 bundle, other than using 3 colors. Use proper back twist and you will have a 2 bundle just as round as a 3.
I have no idea how many strings I've made over the years--several thousand for sure. As with anything else, it gets easier with practice.
If I can help, just shoot me an e-mail.
