Van Dykes is fine for your purposes. If you have never done anything before, try squirrels. The kits are cheap and the squirrels are generally plentiful. Make a mistake and no big deal...just get you another squirrel. It's a great confidence builder and you can move on to other animals from there.
(I started the same way a few years back)

Taxidermy is not learned by doing the easiest first, back in the 60s when I learned we had to start with birds and then work ourself to small animals such squirrels rats gerbils and such.
Then to medium size mammals and then large game.

I dont know about you guys but after 3 yrs of taxidermy I think Deer are by far the easiest. Ducks take forever cutting all the fat from between the feather quills, and then getting all the meat from inside the wing. Small mammals have their difficulties as well, such as getting the bones out of the toes without cutting holes. If your just getting started, Id say go with a deer shoulder mount or a coyote. Something with enough hair to hide the holes you'll cut. And when fleshing you will cut holes, just be as careful as possible and you'll do fine.

I learned with squirrels and was told "If you can mount a squirrel, you can mount anything". Truth be told it's the truth. If you can mount a squirrel, you can mount a deer, if you can mount a deer, you can mount anything. Hopefully, the squirrel will look like a squirrel.
