has anyone ever heard of someone doing (or have done themselves) a head and shoulder mount on a squirrel. I was thinking it might be a cool way to mount a squirrel but i wasn't sure if you can actually do it.

Yes and you can do them with open mouth like attacking and put some wild cat eyes and they look mean as heck
