My friend and I caught a couple muskrat one morning and while skinning them asked my friend," I wonder how it taste" he just laughed. Then we both looked at each other and shrugged out shoulders and cleaned it like you would a squirrel," much easier though"brought it in and put it in a crock pot with potatoes and what not. Couple hours later it was avery nice surprise to take that first slow bite, and it was very good and tender. Probably will try it again next year. I think i would be able to atleast try just about anything.... take the head and fur off of most things.... it all looks pretty similar....

I've eaten beaver and it's not bad. BBQ some and fried some like chicken fried steak.

Tried Nuetra once but never again.

All they eat are roots, grasses, and somtimes they will eat mussels so they are probably good for you. Squirrels are also a rodent like a muskrat.

I'm a big fan of beaver myself, wife won't let me bring BBQ sauce into the bedroom though
