I shoot them with the shotgun and then just take their tails. Eating them is a waste of time but I've heard they can be good.
I never ate any squirrel tail.............

Lots of good stuff on a squirrel.
Tails for fly tying. Discard rest of hide.
Take mr. squirrel, clean and rinse well. Fill a small cooler with water and add enough kosher salt to the water so you can float a raw egg.
Place several squirrel bodies in the brine and leave them over night. In a cold or cool place.
Next day, place the squirrels in the smoker and smoke 'em! They are absolutely delicious this way. I like to mix hickory and mesquite chips when I make them.
Even though I'm from the north, I love grits!!!

Learned to eat them while I was competing in North Carolina during my college sports years. Then became employed in a inner city hospital, working with lots of black folks who hailed from the south. Began to eat the foods they brought in from home and fell in love with that "southern cookin'".
The best fried chicken a guy ever had, sweet potato pie, grits, ate a fatback sandwich once, not bad, beans to die for and some kind of "game" in a gravy with biscuits that was fantastic. Was afraid to ask what the game was, as it could have been roadkill for all I know, but it sure tasted good.
I'll eat in the south anyday!!!
